Lemon & Dark Chocolate Tart 柠檬黑巧克力塔

12月天,几乎天天都在下雨,仿佛像冬天的感觉… 有时,整个人会感觉闷闷的。在杂志上看到了这黑巧克力塔的食谱,还觉得这真适合在这个季节吃的的甜点,所以就开始在厨房里忙了起来。

我喜欢黑巧克力,吃了它后会人让人有愉悦的心情。爸爸和哥哥吃的巧克力塔后,也很喜欢。神奇的黑巧克力就这样让我们一家在享用下午茶时,陶醉在香浓微苦中开心了起来… (^_−)−☆

P. S. 适量的少吃一点黑巧克力,对身体有益。

Recipe : —->

For the crust :

  • 245g flour
  • 1 tablespoon fresh lemon zest
  • 50g sugar
  • 100g unsalted butter, chill and cut into cubes
  • 1 large egg, yolk only
  • 2 tablespoon lemon juice
  • 1 tablespoon cold water

制作饼皮:

  •     245克面粉
  •     1汤匙新鲜的磨柠檬皮碎
  •     50克白糖
  •     100克无盐牛油,冷却和切成丁状
  •     1个大鸡蛋,用蛋黄而已
  •     2大匙,柠檬汁
  •     1大匙,冷开水

For the filling :

  • 340g dark chocolate
  • 285g double cream
  • 30g unsalted butter

馅料:

  •     340克黑巧克力
  •     285克奶油
  •     30G牛油

Methods :

  • First make the pastry. Mix the flour, lemon zest and sugar together. Cut the butter into the flour until they combine to form little lumps. Add the egg yolk and mix into it. Add the lemon juice and cold water little by little while mixing until a dough just begin to form, do not over mix. Form the pastry into a ball, wrap with cling wrap and chill it for 1 hour.
  • 首先制作饼皮。将面粉,柠檬皮碎和糖混合在一起。将牛油块加入面粉混合里,搓直到他们结合起来,形成小块。加入蛋黄,同时搅拌直到面团刚开始形成,不要过度搅拌,一点一点加入柠檬汁和冷水。揉成一球,用保鲜纸包好,放入冰箱1小时。

  • Preheat oven to 200C. Roll and press the cold dough into a 23cm (diameter) tart pan. Trim off and discard overhanging dough. Prick the bottom of the dough all over with a fork, cover with baking paper and weight down with uncooked rice or beans. Bake for 13-15 mins until the edge turn golden. Remove the uncooked rice or beans, and bake for 3-5 mins more until golden brown. Set aside to cool.
  • 烤箱预热至200℃。撒面粉在桌面和冷面团上,辊平面团成圆形23cm(直径),放进塔模里,修去面团边。用叉子在塔皮底部刺小洞,让空气排出,烘焙纸覆盖在塔皮上,用生米或豆类压在塔皮上。放入烤箱,烘烤13-15分钟,直到边缘金黄。把米拿走,再烤3-5分钟,直至呈金黄色。然后,让塔皮冷却下来。

  • Make the filling. In a saucepan, bring the cream and butter to a simmer (low fire), then stir in chopped dark chocolate, stir until the chocolate has completely melted. Remember to use really low fire, if not the chocolate sauce will burn.
  • 在一个锅里,用小火把奶油和黄油融化,然后拌入切碎的黑巧克力,搅拌直到巧克力完全融化。请记住,用非常低的火,不要让巧克力酱会烧焦。
  • Pour the chocolate sauce into the cooled tart crust and put in the fridge to chill. Enjoy!
